Roast Beef Po’Boy

8 slices Fettayleh Roast Beef
2 medium size baguette
4 slices Gruyere cheese slices
3 large pickled gherkins, sliced thinly
Mustard sauce

 

Coleslaw
 ½ cup shredded red cabbage
 ½ cup shredded white cabbage
 ½ cup finely julienned carrots
 1 tbsp whole egg mayonnaise
 1 tsp sour cream
 salt to taste

Method

In a bowl combine shredded red and white cabbage and carrots. Add mayonnaise and sour cream and mix well. Season with salt to taste.

Slice baguettes lengthwise, to split open but not separate.

Squeeze enough mustard sauce on inside of bread and begin to assemble slices of roast beef, Gruyere cheese and pickles evenly between the two baguettes.

Divide coleslaw in half and assemble in the centre of the baguettes.
